Chop [cauliflower], [mushrooms], and [walnuts] finely, to uniform size.

Mix together in bowl and add soy sauce (2 tbsp), molasses (1 tsp), maple syrup (1 tsp), and liquid smoke (0.25 tsp). Mix well.

Add remaining spices: nutritional yeast (2 tbsp), rubbed sage (1.5 tsp), ground pepper (0.5 tsp), garlic powder (0.5 tsp), nutmeg (0.25 tsp), and ground thyme (0.25 tsp). Mix very well.

Turn out evenly onto parchment lined baking sheet and bake for minutes (30).

After minutes (30), flip/mix with spatula and continue baking for an additional minutes (15).

Mix all dry ingredients in skillet: bread flour (0.25 cup), nutritional yeast (1 tbsp), rubbed sage (1 tsp), salt (0.5 tsp), ground pepper (0.5 tsp), and ground thyme (0.125 tsp). Toast over medium heat for a few minutes.

Increase heat to medium-high and slowly stir in almond milk (3.5 cups), whisking continuously to break up any clumps.

Once it begins to bubble, lower heat and add the prepared sausage crumbles.
