Preheat oven to 375 degrees C. Bring pre-made pie crust (2 whole) to room temperature.

In a large bowl, mix apples (10 cooking), lemon juice (2 tbsp), granulated sugar (0.5 cup), packed brown sugar (0.25 cup), flour (3 tbsp), cinnamon (0.5 tsp), nutmeg (0.25 tsp), and pumpkin pie spice (1 tbsp).
