In a large mixing bowl, toss together granny smith apples (8 cup), light brown sugar (0.5 cup), all purpose flour (0.25 cup), ground cinnamon (1 tsp), ground nutmeg (0.5 tsp), salt (0.25 tsp), lemon juice (1 tbsp), and vanilla extract (1 tsp) until the fruit is thoroughly coated.

Transfer the apple filling into a 9x13 inch baking dish that has been sprayed with non-stick spray and smooth the surface.

Prepare the topping by mixing all purpose flour (1 cup), rolled oats (1.5 cup), light brown sugar (1 cup), and ground cinnamon (1 tsp) in a bowl. Pour in the melted plant based butter (0.75 cup) and vanilla extract (1 tsp), stirring until combined.
