
Vanilla Cupcakes

Preheat oven to 350 degrees F. Line cupcake pans with liners (15 cupcake).

In one bowl, combine unsweetened almond milk (1.5 cups), apple cider vinegar (1.5 tbsp), melted coconut oil (0.5 cup), and vanilla extract (2 tsp). Let mixture sit for minutes (10) to curdle.

In another bowl, sift together flour (2 cups), sugar (1 cup), salt (0.5 tsp), baking powder (2 tsp), and baking soda (0.5 tsp).

Pour wet ingredients into dry ingredients and stir until just combined.
