Preheat the oven to 175 degrees C. Line two cupcake tins with silicone or paper baking cups.

In a large bowl, mix together all the all-purpose flour (3 cup), granulated sugar (1.5 cup), baking soda (2 tsp), salt (1 tsp), vanilla extract (4 tsp), apple cider vinegar (2 tsp), canola oil (10 tbsp), and water (2 cup) until smooth.

Pour the batter into each baking cup until it’s three-quarters full.

Bake for 25 to 30 minutes. Test a cupcake by sticking a toothpick in the middle. If the toothpick comes out dry, the cupcakes are done.
