Instructions

    Cut the orange (4), lemon (3), and limes (2) into large chunks. Pulse half the fruit in a food processor until broken into small chunks; repeat with the rest. Place the fruit in a large pan with water (1 litre). Boil, then simmer, covered, for 30 minutes. Remove from heat and infuse, covered, overnight.

    Add granulated sugar (1.75 kg) and warm gently. Stir until the sugar is completely dissolved, then bring to a boil. Boil uncovered for 40-50 minutes until the mixture reaches 105°C. Spoon the hot marmalade into sterilized jars and seal.
