
Ginger Citrus Soba Noodles
These soba noodles are stir-fried in a sweet, tangy orange-ginger soy sauce with crunchy snow peas and edamame. This warm, flavorful dish comes together quickly.

Whisk orange juice (0.25 cup), lime juice (1 tbsp), soy sauce (1 tbsp), sriracha (0.5 tsp), toasted sesame oil (1 tsp), and minced fresh ginger (2 tsp) together for the sauce.

Cook soba noodles (4 ounces) in boiling salted water for 8-10 minutes. Drain and set aside.

While the noodles are cooking, heat a large skillet with olive oil (1 tbsp). Once hot, add snow peas (1 cup) and a pinch of salt. Stir-fry for a few minutes until tender with a slight char. Remove from the pan and set aside. Let the pan cool slightly.

With the pan off but still warm, pour in the prepared sauce. Let it bubble slightly, stirring continuously as it thickens for 2-3 minutes. Turn heat to low if needed to prevent burning.

Add the cooked soba noodles (4 ounces), snow peas (1 cup), and edamame (1 cup) to the pan. Stir to coat everything with the sauce. Add a good squeeze of [orange wedges] and [lime wedges], and cook for a few minutes more. Taste and adjust seasoning with more [soy sauce], orange, lime, or [sriracha] if desired.

Top with a drizzle of toasted sesame oil, chopped scallions (0.25 cup), and sesame seeds (2 tsp) before serving.
