Texas meets Ireland in this spicy casserole topped with lime-kissed mashed potatoes. A creamy layer of mashed red potatoes sits over a succulent and spicy stew of black beans, mushrooms, tomatoes, poblano peppers, and corn, with a Southwestern twist. To give it true tamale flavor, crushed tortilla chips are incorporated into the stew. This hearty meal is perfect for a comforting dinner and yields delicious leftovers.

Instructions

    Place red potatoes (2.5 lbs) in a pot and submerge in salted water. Cover, bring to a boil, then simmer for minutes (15) until tender.

    Drain potatoes and return to the pot while hot. Mash lightly, then add unsweetened non-dairy milk (0.5 cup), olive oil (2 tbsp), tsp lime zest (1 scant), and salt (0.75 tsp). Mash until creamy, season to taste, cover, and set aside.

    Preheat a large, heavy-bottomed pan over medium-high heat. Sauté onion (1 pc) and poblano pepper (1 pc) in olive oil (2 tbsp) with a pinch of salt (0.75 tsp) for minutes (10) until softened.

    Add garlic (4 cloves) and sauté for seconds (30). Stir in mushrooms (8 oz) and fresh cilantro (1 cup), cooking for minutes (5) until mushrooms release moisture. Add plum tomatoes (1.25 lbs), corn (0.5 cup), dry red wine (0.25 cup), salt (0.75 tsp), ground cumin (1 tsp), and red pepper flakes (0.5 tsp). Increase heat, cover, and stir occasionally for 7 minutes (5 to) until tomatoes break down.

    Crush tortilla chips (2 oz) into crumbs and add to the stew, mixing well. Stir in lime juice (2 tbsp) and franks red hot (2 tbsp). Fold in black beans (3 cups) and heat through. Taste for seasoning.

    Preheat oven to 350°F (175°C). Lightly grease a deep 11x13 casserole dish with [oil spray]. Transfer the stew to the casserole, spread evenly with a spatula. Dollop the mashed potatoes over the stew and spread into an even layer.

    Bake for minutes (25) until potatoes are lightly browned. Optionally, broil for 1-2 minutes for extra browning. Serve hot, garnished with [fresh red chilli], [fresh cilantro], and [lime slices].
