
Sweet & Spicy Tofu
This sweet and spicy tofu dish offers a delightful blend of fresh, zingy, and satisfying flavors. Perfect for a light yet fulfilling meal, it's an ideal choice for spring and summer, and incredibly simple to prepare.

Heat the vegetable oil (4 tbsp) in a large skillet over high heat.

Meanwhile, drain excess liquid from extra-firm tofu (200 g) and cut into 1 inch cubes.

Test if the [vegetable oil] is hot with a small piece of [extra-firm tofu]. Once sizzling, add the [extra-firm tofu] cubes (in batches if needed) and fry until golden and crispy on all sides. This will take about minutes (10).

Transfer the cooked [extra-firm tofu] to a plate lined with kitchen towel to absorb excess oil.

Reduce heat to medium. Add the onions (3 spring), minced garlic (1 tsp), minced ginger (0.5 tsp), sriracha sauce (2 tbsp), maple syrup (1 tbsp), soy sauce (2 tbsp), and rice vinegar (1 tbsp). Fry for minutes (2).

Return the [extra-firm tofu] to the pan and coat well with the sauce.

Serve immediately with rice or noodles. Garnish with fresh mint (1 bunch) and a squeeze of lime (1) juice.
