
Sweet & Sour Tofu Stir-Fry

In a large shallow bowl, combine the firm tofu (15.873 oz) cubes and soy sauce (2 tbsp). Stir to coat.

Then add the cornstarch (0.25 cup), salt (0.5 tsp), and ground black pepper (0.25 tsp). Gently stir until all the pieces are well coated.

Add the vegetable oil (1 tbsp) to a large pan over medium-high heat. When hot, add the [firm tofu] and cook for 7-10 minutes, or until golden on all sides. Don't disturb the [firm tofu] too much while it's cooking to avoid crumbling.

Meanwhile, make the sauce by whisking together the pineapple juice (0.5 cup), rice vinegar (0.25 cup), tomato paste (0.25 cup), soy sauce (3 tbsp), maple syrup (2 tbsp), garlic cloves (2 clove), cornstarch (2 tsp), and fresh ginger root (1 tsp) in a small bowl.

Cook the white long grain rice (1.5 cups) according to the package instructions.

When the [firm tofu] is golden, transfer it to a bowl and set it aside. Return the same large pan to the heat, add heat up some vegetable oil (2 tsp). Cook the red onion (1 onion) and carrots (1 carrot) for 4-5 minutes.

Then add the pepper red bell pepper (1 bell) and pineapple pieces (0.5 cup), and cook for another minute.

Add the sweet and sour sauce to the veggies in the pan, along with the [firm tofu]. Let it simmer for 3 minutes, or until the sauce thickens a bit.

Remove from the heat, serve alongside the [white long grain rice], garnish with [green onions], and enjoy!
