Preheat the oven to 400 degrees F. Boil sweet potatoes (2 cups) in a saucepan for 15 to 20 minutes or until fork-tender. Remove skin and puree in a blender or food processor until smooth.

In a large bowl, combine sweet potatoes (2 cups) puree, plant-based milk (0.25 cup), and maple syrup (0.63 cup). Add in oat flour (1.5 cups), cocoa powder (0.63 cup), cinnamon (0.5 tbsp), baking soda (2 tsp), salt (0.5 tsp), vegan chocolate chips (0.25 cup), and chia seeds (0.25 cup) and crushed almonds (0.25 cup) (if using).

Place the dough in a greased bread loaf pan and bake in the oven for 35 to 40 minutes or until a fork comes out clean and the top is hardened a bit. Let cool completely and enjoy topped with nut butter of choice!
