Instructions

    Boil the sweet potatoes (500 g) and russet potatoes (500 g) until just tender. Drain well and mash together.

    Mix the roasted red bell pepper (1 piece), red chilli powder (0.5 tsp), fresh coriander (2 tbsp), and seasoning into the mash. Stir in breadcrumbs (70 g), carrots, grated (1 handful), and organic gourmet seed mix (25 g) to form a soft dough. Shape into 10 patties.

    Process the remaining breadcrumbs (70 g) in a food processor until fine, then coat each patty thoroughly.

    Heat the vegetable oil (3 tbsp) in a frying pan. Fry the patties for 3 minutes per side until golden and crispy.

    Assemble the burgers using burger bun (10 block), salad leaves (1 handsful), tomato chutney (5 tbsp), and cherry tomatoes (200 g) if desired.
