
Strawberry Oatmeal Bars
These wholesome strawberry oatmeal bars are the perfect healthy fruit dessert. Featuring fresh juicy strawberries sandwiched between a buttery whole-grain oat crumble and topped with a light vanilla glaze, they are quick to prepare and satisfyingly sweet.

Preheat oven to 190C. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides.

In a bowl, mix old-fashioned rolled oats (1 cup), white wheat flour (0.75 cup), light brown sugar (0.33 cup), ground ginger (0.25 tsp), and kosher salt (0.25 tsp). Pour in coconut oil (6 tbsp) and stir until clumpy.

Set aside 0.5 cups of the crumble. Press the remainder firmly into the bottom of the prepared pan.

Scatter half of the strawberries (2 cup) over the base. Sprinkle with cornstarch (1 tsp), lemon juice (1 tbsp), and 0.5 tbsp of granulated sugar (1 tbsp).

Scatter the remaining berries and the rest of the granulated sugar (1 tbsp) on top. Cover with the reserved oat crumbs.

Bake for 35 minutes until the fruit is bubbly and the topping is golden. Cool completely on a wire rack.

Whisk powdered sugar (0.5 cup), pure vanilla extract (0.5 tsp), and plant milk (1 tbsp) until smooth. Drizzle over the bars, then slice.
