
Strawberry Borage Punch
This vibrant strawberry punch is beautifully garnished with borage flowers, imparting a delicate summery cucumber flavour. A delightful and refreshing vegan drink perfect for any gathering.

Sprinkle the zest (1 lemon) over the strawberries (500 g), stir in the juice (1 lemon) and caster sugar (100 g). Leave to stand for 20-30 minutes. Then add the dry white wine (1 bottle) and chill for 1-2 hours. (Prepare to the end of this step up to 6 hours ahead.)

Just before serving, add the mint leaves (1 handful), borage flowers (1 handful) and borage leaves (1 handful), followed by the sparkling wine (1 bottle) (or elderflower presse) and pimms (2 tbsp) if using. Serve from a punch bowl or jug.
