
Seitan Doner Kebab
Drawing inspiration from the shaved, roasted meat dishes of Greece, Turkey, and the Middle East, our veganized version of this satisfying meal features strips of chewy seitan, crisp vegetables, pillowy bread, and flavorful kebab-shop sauces.

Thinly slice the [seitan].

Heat the vegetable oil (1 tbsp) in a large pan over medium-high heat. Add the [seitan] and [chicken spice mix], and cook until golden to your liking.

Mix the unsweetened soy yogurt (0.33 cup), tahini (1 tbsp), clove (1 garlic), and salt (0.25 tsp) in a small bowl.

Blend the vegan mayonnaise (0.5 cup), fresh mint leaves (2 tbsp), fresh dill (2 tbsp), fresh lemon juice (1 tsp), agave syrup (1 tsp) (optional), and salt (0.25 tsp) in a small food processor. Alternatively, finely mince the herbs and mix in with the remaining ingredients.

Mix the ketchup (2 tbsp), harissa paste (1 tbsp), and pomegranate molasses (1 tsp) in a small bowl.

Optional step: press the pide bread (1 turkish) in a preheated grill pan.

Slice the pide bread (1 turkish) open to create a pocket. Smear the herby and hot sauces on each side of the pide bread (1 turkish), and fill with the [seitan] and veggies (iceberg lettuce (0.25 head), tomato (1 medium), cucumber (0.25), red onion (0.25 small)).

Serve with pepperoncini peppers (4 pickled) on the side, and drizzle with the tahini garlic sauce. Enjoy!
