
Quinoa Black Bean Burritos

Rinse quinoa (1 cup), then drain. Place water (2 cups) and quinoa (1 cup) in a saucepan and bring to a boil. Cover, and simmer for 10-15 minutes until cooked. Remove from heat, let sit for about 5 minutes, then add cumin (1 tsp) or taco seasoning and stir.

Meanwhile, heat black beans (2 can) in a saucepan over medium heat.

Warm wheat tortillas (8 whole). Layer with [quinoa], [beans] (drained), sliced yellow onion (1 large), sliced tomato (1 large), sliced avocado (1), and a drizzle of creamy vegan salad dressing (0.25 cup). Wrap and enjoy.
