
Oven Baked Tofu Shakshuka
Shakshuka is known as an easy and healthy breakfast option in many countries, but it can definitely be enjoyed at any time during the day. We gave our own plant-based spin to the classic dish and used silken tofu, which provides a very "eggy" feel to that of the traditional Shakshuka, especially when combined with kala namak salt.

Preheat the oven to 400°F (200°C). Add all the canned diced tomatoes (1.67 cup), bell pepper (2 red), onion (1 red), red chili (2 fresh), clove (3 garlic), tomato paste (2 tbsp), olive oil (1 tbsp), smoked paprika powder (1.5 tsp), ground cumin (1 tsp), ground coriander (1 tsp), and salt (1 tsp) to a 9 x 12 inch (23 x 31 cm) baking dish*. Mix together, then bake in the oven for 30 minutes.

Meanwhile, mix together the kala namak (1 tsp) and ground turmeric (0.5 tsp) on a plate. Coat the silken tofu (11 oz) slices lightly with this turmeric mix.

Place the silken tofu (11 oz) on top of the tomato mixture and press the pieces in a bit. Transfer the baking dish back into the oven and let it bake for another 10 - 15 minutes.

Serve with toasted pita bread (5 small), and garnish with [fresh cilantro], [za'atar spice mix], and [lemon slice] if desired. Enjoy!
