
Nut-stuffed Dates
These delightful nut-stuffed dates are a naturally sweet and satisfying vegan treat. Medjool dates are filled with roasted almonds or walnuts, then sprinkled with finely chopped pistachios and optional rose petals. Serve them as a snack, appetizer, or a light dessert, perhaps with a side of homemade vegan labneh.

Preheat the oven to 140°C (fan 120°C, gas 1). Spread the almonds (16) and walnuts (8) on a baking tray. Roast for [8-10 minutes] until lightly golden. Let cool.

While nuts are roasting, prepare the vegan labneh if using: Line a sieve with clean muslin and set it over a bowl. Spoon plant yogurt (500 g) and salt (0.5 tsp) into the sieve. Cover and chill overnight to drain and thicken.

Slit each of the dates (16) lengthwise, remove the stones. Stuff each date with almonds (2) or walnut (1).

Arrange the stuffed dates on a serving plate. If using, serve with the prepared vegan labneh. Scatter over the finely chopped pistachios (25 g) and [rose petals] (if using).

Serve immediately with mint tea, apricots, figs, or sultanas.
