Instructions

  1. 1

Line a baking tray and preheat the oven to 350°F (180°C)*.

  2. 2

Mash the bananas (2 ripe) in a large bowl. Then mix together with the peanut butter (0.33 cup) until smooth.

  3. 3

Add the remaining ingredients: pure vanilla extract (0.5 tsp), quick-cooking oats (1.5 cups), unsweetened shredded coconut (2 tbsp), dried cranberries (2 tbsp), and vegan chocolate (0.71 oz). Mix well.

  4. 4

Roll the dough into balls and place on the baking tray. Press to form each ball into a cookie shape, as the cookies don't spread in the oven. Press some more [vegan chocolate] decoratively on top if desired.

  5. 5

Bake on the middle rack of the oven for 10-12 minutes, or until golden.

  6. 6

Allow the cookies to cool on the tray slightly before transferring to a wire rack to cool completely. Enjoy! (Store in an airtight container in the fridge for up to 2 days, or in the freezer for up to 2 months).
