
Nut Butter Chocolate Oatmeal Cookies

Line a baking tray and preheat the oven to 350°F (180°C)*.

Mash the bananas (2 ripe) in a large bowl. Then mix together with the peanut butter (0.33 cup) until smooth.

Add the remaining ingredients: pure vanilla extract (0.5 tsp), quick-cooking oats (1.5 cups), unsweetened shredded coconut (2 tbsp), dried cranberries (2 tbsp), and vegan chocolate (0.71 oz). Mix well.

Roll the dough into balls and place on the baking tray. Press to form each ball into a cookie shape, as the cookies don't spread in the oven. Press some more [vegan chocolate] decoratively on top if desired.

Bake on the middle rack of the oven for 10-12 minutes, or until golden.
