In a large mixing bowl, combine the rolled oats (2 cup), peanut butter (1 cup), and maple syrup (0.33 cup), mixing well until fully incorporated. If desired, fold through the chocolate chips (0.25 cup).

Lightly wet your hands to prevent sticking. Scoop the mixture and form into 12 small balls, placing them on the prepared plate. Press each ball down into a cookie shape.
