
Moroccan Mujadara
This comforting Moroccan Mujadara is a nourishing vegan meal of tender lentils and brown basmati rice infused with aromatic spices like cumin, coriander, and allspice. Topped with sweet caramelized shallots and fresh garnishes like avocado and tahini, it's a perfect meal-prep staple that is both hearty and flavorful.

Soak brown lentils (1 cup) in hot tap water for 5 minutes while prepping the pot.

Set the Instant Pot to saute and heat olive oil (1.5 tbsp). Saute shallots (3) until tender and slightly caramelized, removing half for topping.

Add garlic (4 clove) and saute until fragrant, then stir in cumin (2 tsp), coriander (1 tsp), allspice (1 tsp), cinnamon (0.5 tsp), turmeric (0.5 tsp), ground ginger (0.25 tsp), kosher salt (1.5 tsp), zest (1 lemon), and water (3 cup).

Drain the lentils and add them to the pot with brown basmati rice (1 cup) and dried mint (1 tsp).

Seal and cook on High Pressure for 11 minutes. Allow to natural release for at least 10 minutes.
