
Homemade Flatbread Pizza
This quick and easy individual vegan pizza can be ready and on the table in under 30 minutes. Featuring a simple homemade base and vibrant toppings like savory red pesto and spicy plant-based cheese, it is the perfect solution for a solo dinner craving. Crispy, flavorful, and completely plant-based, it turns dinner for one into a gourmet experience.

Stir the self raising flour (75 g), plant yogurt (3 tbsp), and olive oil (1 tsp) together in a bowl. Knead for 2 minutes, then set aside to rest for 10 minutes.

Preheat your oven to 200°C. On a floured surface, roll the dough into a circle about 15cm across.

Place a non-stick frying pan over medium heat and dry-fry the pizza base for 3 minutes per side until browned and bubbling. Transfer the base to a baking tray.

Spread with red pesto (1 tbsp) and tear over the plant cheese (20 g). Season with black pepper (0.1 tsp), scatter black olives (10 g) on top, and bake for 8 minutes until the cheese is melting at the edges.

Top the center of the pizza with rocket (10 g), drizzle with the remaining olive oil (0.5 tsp), and cut into slices to serve.
