Instructions

    Preheat a large saute pan over medium heat. Cook the onion (1 large) for 7-10 minutes, stirring occasionally, until caramelized.

    Add garlic (2 cloves) and cook for 30 seconds, stirring constantly. Deglaze with water (0.25 cup).

    Stir in the tomato sauce (1 cup), water (0.5 cup), apple cider vinegar (2 tbsp), balsamic (1 tbsp), maple syrup (0.33 cup) (or 4-5 large medjool dates, pitted & chopped), molasses (1 tbsp), smoked paprika (1 tsp), chili powder (0.25 tsp), cayenne pepper (0.125 tsp) (optional), [pinch of black pepper], fine sea salt (1 tsp), and liquid smoke (3 drops) (optional). Bring to a simmer and cook for 3-5 minutes until slightly reduced.

    Remove from heat and let cool 15 minutes. Transfer to a blender, and blend until smooth. Pour into a jar, and allow to cool. Cover and refrigerate until ready to use.
