Roughly chop the hazelnuts (40 g), then toast them in a dry frying pan until golden, ensuring they don’t burn. Set aside.

Drain the chickpeas (1 tin), reserving the liquid. Transfer the chickpeas to a food processor and add the garlic clove, crushed (1 small), zest (0.5 orange) and juice (0.5 orange), lemon juice (1 tbsp), tahini (1 tbsp), and ras el hanout (2 tsp) along with extra-virgin olive oil (2 tbsp). Blend until smooth.

Season the hummus to taste. Add enough of the reserved chickpea liquid to achieve your desired consistency.

Scrape the hummus into a bowl. Drizzle with a little more [additional extra-virgin olive oil] and scatter the toasted hazelnuts and [additional ras el hanout] on top. Serve immediately with your choice of [crudités, bread or tortilla chips].
