
Filipino Rice Noodles
How to make these Filipino-inspired stir-fried rice noodles with vegetables and tofu in an umami-rich soy-based sauce. Heat the oil (1 tbsp) in a wok or large pan. Add onion (1 small), cloves (3 garlic), stalks (2 celery), extra firm tofu (0.5 block) (or 8 oz seitan), and carrots (2). Cook until vegetables are softened.

Remove the cooked vegetables from the pan and set aside in a bowl.

Add vegetable broth (4 cups) to the wok and bring to a boil. Stir in the rice noodles (8 oz), soy sauce (1 tbsp), and dark soy sauce (1 tbsp).

Once most of the broth has been absorbed and the noodles are tender, return the reserved vegetable and tofu mixture to the wok. Continue to cook until all the broth has been absorbed.

Serve the noodles in bowls and garnish with slices of lemon (1).
