
Creamy Rice Noodle Stir Fry
This Creamy Rice Noodle Stir Fry is a simple way to incorporate plenty of vegetables into your meal! Sautéed broccoli, mushrooms, and asparagus are tossed in a rich tahini stir fry sauce, served over tender rice noodles for a comforting and nutritious dish. Prepare this flavorful meal in just over 30 minutes!

Bring water to a boil for the [rice noodles] and cook as directed. Set aside.

In a large skillet over medium heat, add 1 tbsp of oil (or water). Cook the yellow onion (1 small), cloves (3 garlic), and ginger (1 inch) for 3-4 minutes until lightly browned. Add (or button) mushrooms (4.5 crimini) and cook for 3 more minutes. Add of broccoli (1 head) and of asparagus (1 bunch), then cover the pan for 1 minute to steam.

To the skillet with veggies, add of tahini (0.5 cup), of rice vinegar (3 tbsp), of agave syrup (3 tbsp), and of soy sauce (3 tbsp). Stir to coat the veggies. Slowly add of water (0.25 cup) until a creamy sauce consistency is achieved. Season with of salt (0.5 tsp), hot sauce, a pinch of cayenne, or black pepper if desired. Stir in of freshly chopped cilantro (0.25 cup).

Serve over a bed of cooked [rice noodles], or toss to coat. Sprinkle with additional [sesame seeds] if desired. Enjoy.
