
Easy Vegan Quiche
This gluten-free, soy-free, and grain-free vegan quiche is packed with amazing flavor. Featuring sweet caramelized onions, juicy tomatoes, and fresh dill, it’s the perfect savory dish for brunch or a satisfying breakfast.

Preheat oven to 350F. Pre-bake crust (1 pie) and caramelize onion (1 cup), if not already done.

In a large bowl, combine chickpea flour (1 cup), nutritional yeast (0.25 cup), turmeric (0.5 tsp), salt (0.5 tsp), and baking powder (0.5 tsp). Mix well.

Stir in plant-based milk (1 cup) until a thick batter forms. Fold in caramelized onion (1 cup) and fresh dill (1 tbsp).

Arrange half of the tomatoes (2 large) in the bottom of the pie crust (1 pre-baked). Pour the batter over the top and smooth evenly. Top with remaining [tomato] slices.

Cover pie crust edges with foil to prevent burning. Bake for 30-35 minutes.
