Peel and core the apples (1.25 kg) and chop the red onions (1.25 kg). Place both in a large pan with the sultanas (300 g), zest (1 lemon), juice (1 lemon), and malt vinegar (500 ml). Bring to a boil and simmer gently for 25 minutes, stirring frequently.

Add the demerara sugar (500 g), bring to a boil again and stir until dissolved. Simmer rapidly for 5 minutes, stirring frequently to prevent burning.

Finely chop the mint (75 g) leaves and stir them into the chutney. Let cool before bottling.
