
Apple Crumble

Preheat the oven to 190C/170 fan/gas 5. In a 23cm round baking dish (at least 5cm deep) or a 20cm square dish, toss the apples (575 g) with golden caster sugar (2 tbsp). Flatten the mixture with your hand.

For the crumble topping, combine the plain flour (175 g) and golden caster sugar (110 g) in a bowl with a pinch of [salt]. Rub in the dairy free spread (110 g) with your fingertips until the mixture resembles moist breadcrumbs. Gently shake the bowl and rub in any larger clumps.

Pour the crumble mixture over the [apples] to form a pile in the center, then use a fork to evenly spread it. Gently press the surface with the back of the fork to help the crumble hold together and crisp up, then lightly drag the fork over the top for a decorative finish. Sprinkle the rolled oats (1 tbsp) and demerara sugar (1 tbsp) evenly over the top.

Place the baking dish on a baking tray and bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the [apples] are very soft when pierced with a small, sharp knife. Allow to cool for 10 minutes before serving with [vegan cream].
