Preheat oven to 175°C (350°F). Wash and pat dry firm crisp-sweet apples (4 medium).

Slice the top 0.25 off the apples and remove the core with a paring knife and a spoon. Widen the cavity slightly.

In a bowl, mix the old-fashioned rolled oats (0.33 cup), salt (1 pinch), ground cinnamon (1 teaspoon), ground ginger (0.25 teaspoon), ground cardamom (1 dash), ground nutmeg (1 dash), ground cloves (1 dash), coconut sugar or light brown sugar (2 tablespoons), finely chopped pecans or walnuts (2 tablespoons), and melted coconut oil or vegan butter (1 tablespoon).

Spoon the mixture into the apples, pushing down slightly to fill completely.

Set the apples in a baking dish and add about hot water (0.5 inch) to the bottom. Cover with foil and bake for 40 minutes, or until tender.
