
Apple Berry Bircher Muesli
This creamy and vibrant overnight oats recipe combines rolled oats with almond milk, fresh grated apples, and sweet berries. Naturally sweetened with Medjool dates and maple syrup, it's a healthy, high-fiber vegan breakfast that can be prepared in advance for a stress-free morning.

In a large bowl, combine the rolled oats (200 g) with the apple juice (50 ml), pear juice (50 ml), almond milk (450 ml), grated apples (1.5), and chopped medjool dates (50 g). Squash 0.5 of the blackberries (100 g) and blueberries (100 g) with a fork and stir into the mixture. Cover and refrigerate for 240 minutes or overnight.

When ready, stir the mixture and divide into bowls. Top with the remaining berries, mixed seeds (1.5 tbsp), and a drizzle of maple syrup (1.5 tbsp).
