
Creamy Tofu Tzatziki
This vegan tzatziki is made with tofu, offering a creamy, garlicky, and dilly sauce that pairs perfectly with falafel or as a dip for fresh vegetables and pita bread.
Instructions

Break the tofu (1 block) into large chunks and add to a food processor. Add all ingredients except the cucumber (1 english) and process until very smooth.

Grate the cucumber (1 english) and place it in the middle of a clean towel. Squeeze out excess juices over a bowl. Add the squeezed cucumber (1 english) to the food processor and pulse a couple of times to combine. Do not over-process.

Store the [vegan tzatziki] in the refrigerator for up to week (1). Serve with [falafel], cut [vegetables], [pita bread] and more!
