Instructions
- 1
Preheat the oven to 400 degrees F and lightly grease a large baking sheet or line with parchment paper.
- 2
In a large bowl, combine all purpose flour (2 cup), brown sugar (0.33 cup), pumpkin pie spice (2 tsp), baking powder (1 tsp), baking soda (0.5 tsp), and salt (0.25 tsp). Add vegan butter (0.5 cup), and use a pastry cutter or your hands to work the butter into the dry ingredients until it resembles coarse crumbs.
- 3
Now dump in pumpkin puree (0.5 cup), almond milk (2 tbsp), unsweetened applesauce (0.25 cup), and pure vanilla extract (1 tbsp). Mix with a large wooden spoon until a soft dough forms.
- 4
On a lightly floured surface, knead the dough a few times until it comes together. Flatten the dough with your hands (lightly flour your hands if sticky) into a circle, about 1 inch thick.
- 5
Using a pizza cutter or large knife, cut the dough into 8 pieces.
- 6
Place on prepared baking sheet and bake for minutes (14) to minutes (16), until lightly golden brown on top.
- 7
For the white glaze, combine powdered sugar (1 cup) and almond milk (1.5 tbsp) in a small bowl and whisk until smooth. If the glaze is too thick, add more [almond milk]. If too thin, add more [powdered sugar].
- 8
For the spiced glaze, combine powdered sugar (1 cup), pumpkin pie spice (0.5 tsp), and almond milk (1.5 tbsp) in a small bowl and whisk to combine.
- 9
Let the scones cool for at least minutes (15), then spoon some of the white glaze onto each scone. Drizzle some of the spiced glaze on each scone. Let glazes set before serving.
