In a high speed blender or food processor, combine all of the pie ingredients (minus the crust) including pumpkin puree (2.5 cups), brown sugar (0.33 cup), maple syrup (0.25 cup), plant milk (0.75 cup), vanilla extract (1 teaspoon), pumpkin pie spice (1.5 teaspoons), salt (0.5 teaspoon), and cornstarch (3 tablespoons). Blend until creamy and smooth (should only take a minute).

Pour the pie filling into your vegan pie crust (1 unbaked) and spread out until it’s smooth.

Bake in the oven for [55-60 minutes]. The top should be firm and the crust lightly browned around the edges. If the crust browns too quickly, cover it with foil or use pie protectors.
