Add the cashews, water (2 cup), fresh lemon juice (3 tbsp), nutritional yeast (0.5 cup), turmeric (0.25 tsp), garlic powder (0.5 tsp), salt (1.5 tsp), and optionally shredded vegan cheddar cheese (1 bag) to a high-powered blender. Blend until very smooth.

    For stovetop mac and cheese: Return the [elbow pasta] to the pot and pour in the cheese sauce. Stir until the sauce thickens and serve immediately.
