Gently squeeze excess liquid from the firm tofu (14 ounces). Combine all ingredients including the nooch (0.25 cup), lemon juice (2 tbsp), lemon zest (0.75 tsp), garlic (1 tbsp), salt (0.25 tsp), white pepper (0.125 tsp), and plant milk (0.25 cup) in a high-speed blender or food processor. Blend until well combined and smooth.
