
Vegan Jaffa Cakes
These vegan Jaffa Cakes are a delightful British classic, blending a soft sponge cake base with vibrant orange marmalade and a rich chocolate coating. This recipe recreates the beloved treat with a plant-based twist, delivering all the chocolatey-orangey heaven of the original.

Grease a bun tray. Preheat oven to 180C/350F/gas 4.

In a medium bowl, mix self-raising flour (100 g) and caster sugar (60 g). Add soya drink (100 ml), rapeseed oil (50 ml) and vanilla extract (1 tsp), stirring until just combined. Drop batter spoonfuls into the tray holes. Bake for 8 minutes. Cool in tray for 2 minutes, then transfer to a wire rack to cool completely.

Melt dairy free chocolate chips (150 g) and dairy free margarine (50 g) in a pan on low heat, stirring until combined. Remove from heat and stir in grated zest (0.5 orange).

Once cakes are cool, spoon orange marmalade (15 tsp) onto each. Spoon the melted chocolate mixture evenly over the cakes to cover tops. Refrigerate on the rack for 20 minutes until set. Keep refrigerated until serving.
