Blend the soft tofu (0.75 cup), mustard (2 teaspoons), nutritional yeast (4 tablespoons), lemon juice (1.5 teaspoons), plant-based milk (0.5 cup), olive oil (1 tablespoon), soy sauce (2 teaspoons), [pinch paprika], and [pinch turmeric] until smooth. Season with [salt pepper] to taste. (Optional: add [pinch onion powder], [pinch garlic powder], and/or [pinch black salt] before blending for enhanced flavor.)

Warm the hollandaise sauce in a saucepan over low heat, stirring continuously.

To assemble (optional): Toast the bread (8 slices). Slice the tomato (1) and avocado (1). Place tomato (1 slice) and a few slices of avocado (1) on each piece of toast. Drizzle with warmed hollandaise sauce and sprinkle with [cayenne pepper], [paprika], and [black pepper].
