
Vegan Gluten-Free Oatmeal Waffles
These crispy-on-the-outside, tender-on-the-inside, vegan and gluten-free waffles are lightly sweet and incredibly satisfying. Perfect for a healthy weekday breakfast or a special weekend brunch, they incorporate wholesome ingredients like flaxseed and rolled oats.

Combine almond milk (1.25 cup) and white or apple cider vinegar (1 tsp) in a large liquid measuring cup. Let set for a few minutes to curdle. Then add melted vegan butter (0.25 cup), pure vanilla extract (1.5 tsp) and agave nectar or maple syrup (2 tbsp) and whisk. Set aside.

Add brown rice flour (1 cup), gluten-free rolled oats (0.5 cup), potato starch (0.5 cup), cup tapioca flour (0.25 scant), flaxseed meal (1 tbsp), salt (1 pinch), baking powder (1.5 tsp) and sugar (2 tbsp) to a large mixing bowl and whisk until well combined.

Add wet ingredients to dry and mix until well incorporated. Let set for 10-15 minutes while your waffle iron preheats. (Set to 4 out of 5 for a crispier waffle, adjust to preference.)

Once waffle iron is ready, generously coat with non-stick spray or vegan butter and pour on about 0.33 cup of batter. Cook according to manufacturer instructions. Remove and place on a baking rack in a 200-degree F (93 C) oven to keep warm. Do not stack; keep in a single layer to ensure crispiness remains.

Serve immediately with desired toppings. Store leftovers in a freezer-safe bag and reheat in the toaster for best results. Will keep in the freezer for up to a couple months, although they're freshest within the first couple weeks.
