
Vegan Gluten Free Waffles
These vegan gluten-free waffles are perfectly crispy on the outside and fluffy on the inside. Made with simple ingredients, they are an excellent choice for a delicious and easy breakfast any day of the week.

In a large bowl, mix together the gluten free flour (2 cups), almond flour (2 cups), baking powder (1 tablespoon), cornstarch (2 tablespoons), granulated sugar (4 tablespoons), and salt (0.5 teaspoon). Now add the almond milk (3 cups) and pure vanilla extract (1 teaspoon) to the bowl and mix until just combined.

Heat waffle iron according to instructions. Once ready, cook the waffles per manufacturer instructions. Spray your waffle iron well with [cooking spray] to prevent sticking, and allow the waffle to cook fully before opening the waffle maker. This usually takes around 5-10 minutes per waffle.

Serve immediately with fresh fruit, vegan butter, and maple syrup as desired.

To freeze: Allow the waffles to cool completely. Place in a large freezer bag or container in stacks and freeze. When ready to serve, reheat in the toaster or oven until warmed through.
