This recipe works best with leftover rice. If making from scratch, cook white rice (1 cup) according to package directions, then chill.

Heat canola oil (2 tbsp) in a large pan over medium-high heat. Add garlic (2 clove), onion (0.5 medium), carrot (1 large), and frozen peas (0.5 cup). Cook for 5 minutes, until softened. Then, add tofu scramble (0.5 cup) and cook for an additional 2 minutes.
