Combine canned coconut cream (14 ounces), coconut milk (14 ounces), light brown sugar (1.5 cups), and salt (0.5 tsp) in a large heavy-bottomed pot.

Whisk to combine. Heat on medium-high, stirring constantly until boiling. Reduce heat to medium and simmer, uncovered, stirring occasionally, until thickened.

Cool the mixture in the pot for a few minutes, then transfer to jars. Refrigerate until completely cooled and thickened. It will continue to thicken in the fridge into a thick caramel.
