Place your ice cream churning bowl in the freezer to chill overnight.

In a large saucepan, combine water (0.75 cup), lite coconut milk (1.25 cups), organic cane sugar (0.66 cup), unsweetened cocoa powder (0.66 cup), and sea salt (0.25 tsp). Whisk and bring to a low boil over medium-high heat, whisking frequently. Continue cooking and whisking for 1 minute.

Remove from heat. Stir in vegan dark chocolate (6 ounces) and pure vanilla extract (0.5 tsp) until melted.

Transfer to a mixing bowl and chill in the fridge for 2 hours or until cool. Optionally, blend for 30 seconds on high to remove graininess.

Pour the chilled base into an ice cream maker and churn for about 30 minutes, or until soft serve consistency.

Serve immediately as soft serve, or transfer to a parchment-lined dish or loaf pan, cover, and freeze for 4-6 hours until firm.
