
Vegan Brioche French Toast
This fluffy Vegan Brioche French Toast makes the perfect indulgent weekend breakfast. It's a lighter recipe using wholesome plant-based ingredients, without heavy cream, added sugar or butter, and tastes just as delicious!

In a deep bowl, whisk ground flaxseed meal (2 tbsp) and water (6 tbsp) to create a flax egg mixture.

Add almond milk (0.67 cup), maple syrup (2 tbsp), cinnamon (0.25 tsp) and a [pinch salt] to the flax egg mixture and whisk to combine.

One by one, dip the vegan brioche bread (4 slices) into the flax egg mixture until fully submerged for about 2-3 seconds, then place on a plate.

Repeat with remaining [vegan brioche bread] slices.

Heat coconut oil (2.5 tsp) in a large skillet or pan over medium heat. Place the soaked [vegan brioche bread] slices in, ensuring they aren't touching each other.
