
Samosa Tofu Wraps
These savory wraps are perfect for meal prep, easily assembled the night before or the day of. Enjoy them warm from the microwave for a quick and nutritious breakfast.

Steam the potatoes (2 sweet) in a medium pot using a steamer basket over high heat for [10-15 minutes], or until easily pierced with a fork.

Meanwhile, for the tofu scramble, heat the vegetable oil (1 tsp) in a medium pan over medium heat. Add the onion (1) and sauté until soft.

Gently squeeze out any excess water from the firm tofu (11.464 oz), then crumble the tofu into the frying pan using your hands.

Then add the remaining tofu scramble ingredients: ground turmeric (1 tsp), nutritional yeast (1 tsp), garlic powder (1 tsp), salt (1 pinch), and ground black pepper (1 pinch). Cook for [3-5 minutes], or until everything is heated through. Transfer to a plate.

Return the empty pan to the stove, heat the remaining [vegetable oil], then add the cooked [sweet potatoes]. Pan-fry and lightly mash for [1-2 minutes].

Then add the remaining samosa sweet potato ingredients: frozen green peas (0.25 cup), ground cumin (0.5 tsp), ground coriander (0.5 tsp) (optional), ground turmeric (0.5 tsp), fenugreek (0.5 tsp) (optional), salt (1 pinch), and ground black pepper (1 pinch). Cook for minutes (2), then transfer to a plate.

To assemble the wraps, add some potato filling and tofu scramble to the free tortillas (3 gluten). Top with avocado (1) and pepper (1 bell). Serve with hot sauce (2 tsp) (optional). Enjoy!
