
Samosa Sweet Potato Wraps

Steam the sweet potatoes (2 medium) in a medium pot using a steamer basket over high heat for 10-15 minutes, or until easily pierced with a fork.

Meanwhile, for the tofu scramble, heat the vegetable oil (1 tsp) in a medium pan over medium heat. Add the onion (1 medium) and sauté until soft.

Gently squeeze out any excess water from the firm tofu (11 oz), then crumble the firm tofu (11 oz) into the frying pan using your hands.

Then add the remaining tofu scramble ingredients: ground turmeric (1 tsp), nutritional yeast flakes (1 tsp), garlic powder (1 tsp), salt (1 pinch), and ground black pepper (1 pinch). Cook for 3-5 minutes, or until everything is heated through. Transfer to a plate.

Return the empty pan to the stove, heat the vegetable oil (1 tsp) (for samosa sweet potatoes), then add the cooked sweet potatoes (2 medium). Pan-fry and lightly mash for 1-2 minutes.

Then add the remaining samosa sweet potato ingredients: frozen green peas (0.25 cup), ground cumin (0.5 tsp), ground coriander (0.5 tsp), ground turmeric (0.5 tsp), dried fenugreek leaves (0.5 tsp), salt (1 pinch), and ground black pepper (1 pinch). Cook for 2 minutes, then transfer to a plate.

To assemble the wraps, add some [samosa sweet potatoes] and [tofu scramble] to the soft flour tortillas (3 large). Top with avocado (1), and pepper (1 bell). Finish with hot sauce (2 tsp) (optional). Enjoy!
