In a large food processor, add all ingredients: cooked pumpkin (1 cup), unsweetened applesauce (0.5 cup), dates (6 medjool), water (0.25 cup), rolled oats (1.125 cup), cinnamon (1 tsp), pumpkin pie spice (0.5 tsp), baking powder (1 tbsp), and pure vanilla extract (1 tsp). Pulse or process until the mixture is well combined.

Remove the bowl and blade. Divide the batter evenly, filling 24 sections of a silicone brownie-bites pan or a nonstick miniature muffin pan.
