
Pumpkin French Toast
Vegan Pumpkin French Toast tastes like fall on a plate! This cozy, moist, and sweet breakfast is infused with pumpkin pie flavors and is ridiculously easy to make. Serve with a pat of vegan butter and pure maple syrup for a delicious autumn treat!

In a shallow bowl, whisk together the unsweetened soy milk (1 cup), pumpkin puree (0.5 cup), cornstarch (0.25 cup), packed brown sugar (2 tbsp), pure vanilla extract (1 tsp), ground cinnamon (1 tsp), ground nutmeg (0.25 tsp) and ground ginger (0.25 tsp) until well combined.

In a large non-stick pan, melt vegan butter (1 tbsp) over medium-high heat. Whisk the batter once more before dipping the bread.

Dip each side of the thick bread (8.5 pieces) in the batter, then cook in the pan for 2-3 minutes per side until golden brown. Add more [vegan butter] as needed between slices.

Serve with [maple syrup], [powdered sugar], and optionally [vegan whipped cream] and/or [chopped pecans]. Enjoy!
