Combine the onion (1), pineapple (500 g), pineapple juice (150 ml), red chillies (2), sea salt (0.25 tsp), cumin ground (1 tsp), coriander ground (1 tsp), cloves ground (0.25 tsp), cinnamon ground (0.25 tsp), allspice ground (0.5 tsp), ginger powder (0.5 tsp), light brown sugar (2 tbsp), mustard powder (1 tsp), turmeric powder (1 tsp), celery salt (1 tsp), yellow mustard seed (1 tsp), and lemon (0.5) in a large heavy-based saucepan.

Bring the mixture to a simmer over low-medium heat for 30 minutes, stirring frequently.

If the relish appears too wet, increase the heat and simmer for an additional 10 minutes until the liquid reduces and the mixture thickens. Stir constantly to avoid sticking.
