Cook the soba noodles (6.173 oz) according to package instructions.

Heat vegetable oil (1 tbsp) in a large pan over medium-high heat. Add the shallots (2 medium) and cloves (2 garlic). Cook for 2 minutes, or until lightly golden.

Add the carrots (2), peppers (2 bell), and of red cabbage (0.25 head). Cook for 2 more minutes.

Meanwhile, combine all sauce ingredients: peanut butter (3 tbsp), reduced-sodium soy sauce (1.5 tbsp), toasted sesame oil (1.5 tbsp), hoisin sauce (1 tbsp), sriracha (1 tbsp), agave syrup (0.5 tbsp), and lime (0.5). Mix well in a mason jar.

Once the soba noodles (6.173 oz) are cooked, drain and add them to the pan with the vegetables. Pour the sauce mixture over and toss to combine.
